First Post - My Homemade Paneer (Cottage cheese)

Full cream Milk – 1 Ltr
Lemon – 2/2.5 normal sized
White cotton cloth - Handkerchief
Sieve - a kitchen tool that has many small holes and that is used to separate solids from liquids.

Cottage Cheese

Boil milk. Remove it from gas stove. Stir (keep on moving a spoon) it for 5 mins after removing it from gas stove. Squeeze 2 lemons in one glass. Pour it in milk vessel and stir it for 5 more mins. You will find small white granules like substance in the milk vessel along with the water separated out. In case you feel mixture is still milky and water has not separated out properly, squeeze the rest of half lemon in same glass and pour it in milk vessel again stir it for 2-3 more mins. Now you can see water has separated out properly.

Take a big sieve and wrap the inner part of big sieve with cotton cloth. Pour the mixture of small white granules and water on the wrapped sieve as shown in Figure 1.

Fold it like a small bundle as shown in Figure 2 so that adequate water should squeeze from those granules.

Now keep that bundle which contains the mixture on flat surface and keep a heavy weight vessel above it. Remove the heavy weight vessel from it after 5-10 mins. Open the bundle you can see your homemade paneer is ready.
