Dry Ladyfinger Onion Veggie (Bhindi)


Ladyfinger – 500gms
Red Onion – 1 big
Green chilies – 3
Mustard Oil – 2 tbspn approx
Salt, Turmeric Powder, and Red Chilli Powder
Kitchen Towel.

Wash all the vegetables properly. After washing lady finger rub it properly with kitchen towel. It should be dry out properly otherwise it soaks more oil and takes more time to cook. Slice the onions in the long length and chop the green chilies as shown in Figure 1.

Dice the lady finger in to small pieces shown in Figure 2

Pour the mustard oil in the nonstick pot. Keep it on high flame till the time mustard oil color will turn to transparent. Once mustard oil turned in to transparent color, turn off the flame. Move the vessel so that full vessel should be grease properly. After 2 mins turn on the flame, keep it on low flame add green chilies, toss it once. Add sliced onion in to vessel and keep it on a medium flame, color would turn to light brown as shown in Figure 3.

Add diced lady finger in to vessel as shown in Figure 4. Put approx ½ tspn of Salt, ¼  tspn of turmeric powder, Red chili powder as per taste. Mix it properly. Cover it with the vessel lid.

After every 7-10 mins toss it once with a light hand. After 20 mins remove the vessel lid and keep it open for next 5-7 mins by the time it will change color as shown in Figure 5.

Once it will turn to the color shown in Figure 5, turn off the flame. Now your lady finger veggie is ready.
